Grown in a natural area, this spelt flour is made without the use of chemicals, herbicides or pesticides. The land where the spelt grows serves also as habitat for important bird species of the area.
Cultivated spelt is not a single variety, but a population that releases a bouquet of unique scents and aromas. The cereal is husked and ground in a mill in Val di Cornia. The choice of stone-milling guarantees a fresh product that keeps the content of vitamins and mineral salts unchanged. Spelt flour has a low gluten content and is therefore suitable for the preparation of fresh pasta, biscuits, but also bread when mixed with other flours.
