Preparato con le foglie del finocchietto selvatico, un’erba spontanea della Maremma, in Toscana
Patè per antipasti saporiti da preparare con pane toscano tostato, ma anche come condimento per pasta.
Ingredients: Finocchietto, mandorle, olio extravergine di oliva, acciughe sotto sale, aceto di mele, erbe aromatiche, aglio, sale marino integrale.
Almost all the products processed on the farm come from plants sown by us and are marked with the "from seed to plate" logo.
This choice was determined by several factors: the difficulty in finding organic seedlings at the right time, the enchantment of seeing the seeds sprout, grow in different ways, rhythms, energies during the year, and the belief that a plant born on site is more resistant to pests and climatic adversities.
- Cultivations without the use of any chemical or medicinal product, not even those allowed by the organic regulations.
- Harvesting and processing during the day: we do not have cold rooms, in the evening everything must be pasteurized.
- Simple but tasty recipes: mostly Tuscan, sometimes revisited in the light of new knowledge.
